Avocado Egg Mushroom Sourdough Toast

Ingredients: 

  • 1 slice of sourdough bread 
  •  avocado 
  • 1 egg
  • 4 white mushrooms, sliced 
  • 1 tablespoons olive oil 
  • ¼ cup spinach, chopped 
  • Salt, to taste 
  • Pepper, to taste 

Instructions: 

  1. Place egg in a saucepan. Fill with water over the egg until fully submerged. Bring water to a rolling boil, reduce heat to low, and cook for 12 minutes. 
  2. Remove the egg place it into a bowl of iced water and chill for 5 minutes then peel carefully.
  3. Heat up a small pan and cover with olive oil. Add sliced mushroom, spinach, salt, and pepper then cook on high heat for 5 minutes.
  4. Place sourdough in a toaster until crispy. Add avocado to toast and mash.
  5. Cut hard-boiled egg into slices then place egg, mushroom, and spinach over toast with avocado.
