Black Bean Salsa

 Ingredients: 

  • 1 can black beans, rinsed and drained 
  • ½ bunch of cilantro, chopped 
  • 2 tomatoes, seeded and diced 
  • 1 small onion, diced  
  • 2 small Persian cucumbers, diced 
  • 1 tablespoon olive oil
  • Salt and pepper, to taste 
  • 1 lime 

Instructions:

  1. Thoroughly rinse the can of black beans and drain well. 
  2. Seed and dice the tomatoes, dice the onion, and dice the Persian cucumbers. Chop the cilantro leaves and stems finely.
  3. In a large salad bowl, combine the rinsed and drained black beans, diced tomatoes, diced onion, diced cucumbers, and chopped cilantro.
  4. Add the olive oil, juice of one lime, and salt and pepper. 
  5. Gently toss and mix the ingredients together.
  6. Chill for 30 minutes or serve immediately with chips.
