Chocolate Peanut Butter Rice Cake Bars

Ingredients:

  • 6 brown rice cakes 
  • ½ cup peanut butter
  • ½ cup dark chocolate chips  
  • 1 teaspoon coconut oil 

Instructions: 

  1. Crumble the rice cakes and add them into a large bowl with the peanut butter and mix thoroughly. 
  2. In a 9 x 9 pan, spread out the rice cake and peanut butter mixture. 
  3. In a microwave-safe bowl, add the chocolate chips and coconut oil. Microwave in 30-second intervals until fully melted 
  4. Pour the melted chocolate over the peanut butter rice cake mixture in the pan. 
  5. Place in the freezer for 30 minutes then cut into squares to serve.
