Ingredients:
6 Medjool dates, pitted
3 tablespoons peanut butter
12 whole almonds
1 tablespoon crushed almonds
½ cup dark chocolate chips
1 teaspoon coconut oil
Instructions:
Make a small vertical slit in the dates (make sure you don’t cut all the way through) and add ½ tablespoon of peanut butter inside each date. Add two almonds to each date and close the slit.
In a microwave-safe bowl, add the chocolate chips and coconut oil. Microwave in 30-second intervals until fully melted.
Pierce the filled dates with a toothpick and dip them into the bowl of melted chocolate. Roll the filled date in the melted chocolate until fully covered.
Place the chocolate-covered dates onto a baking sheet with parchment paper. Sprinkle crushed almonds onto each. Freeze for 10 minutes before serving.
