Peanut Butter Dark Chocolate Almond Dates

Ingredients: 

  • 6 Medjool dates, pitted 
  • 3 tablespoons peanut butter 
  • 12 whole almonds
  • 1 tablespoon crushed almonds 
  • ½ cup dark chocolate chips  
  • 1 teaspoon coconut oil 

Instructions: 

  1. Make a small vertical slit in the dates (make sure you don’t cut all the way through) and add ½ tablespoon of peanut butter inside each date. Add two almonds to each date and close the slit.  
  2. In a microwave-safe bowl, add the chocolate chips and coconut oil. Microwave in 30-second intervals until fully melted. 
  3. Pierce the filled dates with a toothpick and dip them into the bowl of melted chocolate. Roll the filled date in the melted chocolate until fully covered.
  4. Place the chocolate-covered dates onto a baking sheet with parchment paper. Sprinkle crushed almonds onto each. Freeze for 10 minutes before serving.
