Ingredients:
4 cups water
2-3 tablespoons white miso paste
4 ounces soft tofu, cubed
1 bundle, or 90 grams, soba noodles
3 baby bok choy, halved
Instructions:
Cut bok choy in half vertically then wash thoroughly. Carefully cube the tofu into 1-inch pieces.
In a small saucepan, add two cups of water and bring to a rapid boil then add the soba noodles and cook for 4 minutes. Transfer the soba noodles onto the serving bowl and set aside.
Add the bok choy to the same pot of rapid boiling water and cook for 2 minutes. Drain and set onto a serving bowl.
In a separate saucepan, add two cups of water and bring to a simmer. Add the miso paste and stir until fully dissolved. Add the tofu pieces to the pot and cook for 5 minutes on medium heat.
Pour the miso with tofu over the serving bowl with soba noodles and bok choy. Serve immediately
