Sweet Potato Pancakes

Ingredients: 

  • 1 cup cooked sweet potato, flesh removed and mashed 
  • 1 ½ cup rolled oats  
  • Neutral oil for frying 
  • 2 teaspoons baking powder 
  • 1 ½ teaspoon cinnamon 
  • 2 eggs
  • 1 cup almond or soy milk 
  • 1 tablespoon honey 
  • Toppings: sliced banana, yogurt, peanut butter, honey, and crushed almonds (optional)


Instructions

  1. In a blender, add all the ingredients and blend until smooth.
  2. Let the batter rest for 5 minutes and begin to heat up a nonstick griddle or skillet on medium-low with a little bit of oil. 
  3. Use a ¼ cup measurement to spoon the batter onto the skillet or griddle. 
  4. Cook for 2 minutes on each side or until bubbles appear on the uncooked side of the pancake.
  5. Flip the pancake and cook for 1-2 minutes or until cooked through. Add toppings and serve immediately.
