Sweet Potato Pancakes

Ingredients:
1 cup cooked sweet potato, flesh removed and mashed
1 ½ cup rolled oats
Neutral oil for frying
2 teaspoons baking powder
1 ½ teaspoon cinnamon
2 eggs
1 cup almond or soy milk
1 tablespoon honey
Toppings: sliced banana, yogurt, peanut butter, honey, and crushed almonds (optional)
Instructions
:
In a blender, add all the ingredients and blend until smooth.
Let the batter rest for 5 minutes and begin to heat up a nonstick griddle or skillet on medium-low with a little bit of oil.
Use a ¼ cup measurement to spoon the batter onto the skillet or griddle.
Cook for 2 minutes on each side or until bubbles appear on the uncooked side of the pancake.
Flip the pancake and cook for 1-2 minutes or until cooked through. Add toppings and serve immediately.
