Sweet Potato Peanut Butter Rice Cakes

Ingredients: 

  • 2 brown rice cakes, lightly salted 
  • 2 tablespoons toasted oats 
  • 2 teaspoons peanut butter 
  • 1 small sweet potato, washed and patted dry
  • 1 tablespoon crushed almonds 
  • 1 teaspoon chia seeds 

Instructions: 

  1. Pierce the sweet potato with a fork 3-4 times. Place on a microwave-safe plate and microwave for 5 minutes, turning halfway. 
  2. Smear the sweet potato over the rice cakes drizzle 1 teaspoon of peanut butter and add 1 tablespoon of toasted oats onto each rice cake. 
  3. Top each rice cake with ½ tablespoon of crushed almonds and ½ teaspoon of chia seeds and serve immediately. \
