Sweet Potato Peanut Butter Rice Cakes

Ingredients:
2 brown rice cakes, lightly salted
2 tablespoons toasted oats
2 teaspoons peanut butter
1 small sweet potato, washed and patted dry
1 tablespoon crushed almonds
1 teaspoon chia seeds
Instructions:
Pierce the sweet potato with a fork 3-4 times. Place on a microwave-safe plate and microwave for 5 minutes, turning halfway.
Smear the sweet potato over the rice cakes drizzle 1 teaspoon of peanut butter and add 1 tablespoon of toasted oats onto each rice cake.
Top each rice cake with ½ tablespoon of crushed almonds and ½ teaspoon of chia seeds and serve immediately. \
