Tofu Avocado Wrap

Ingredients: 

  • 1 whole grain tortilla
  • 8 oz extra firm tofu, 1-inch cubes 
  • ¼ avocado, mashed 
  • ½ lime 
  • 1 teaspoon garlic powder 
  • 1 tablespoon olive oil 
  • Salt, to taste 
  • Pepper, to taste 
  • ⅓ cup spinach, chopped 
  • 1 tomato, diced 

Instructions:

  1. Remove tofu from the packaging and pat dry using paper towels. Cut into 1-inch cubes.
  2. Heat up a medium skillet on medium-high heat with olive oil. Add the diced tofu, salt, pepper, and garlic powder and cook for 5-7 minutes or until golden brown. 
  3. Dice the avocado and chop the spinach. In a small bowl, mash the avocado, and add lime, salt, and pepper. 
  4. Place the tortilla on a clean surface and add the mashed avocado then carefully place the spinach, tofu, and tomatoes. 
  5. Carefully fold the sides of the tortilla inward and roll from the bottom. Slice the wrap and serve.
